Santuario Fátima represents a unique partnership between the Facusse family’s longstanding coffee enterprise and the innovative processing arm of the Santuario Project. The Facusse family, who both own and manage the renowned Finca Tres Milagros, bring generations of local farming expertise and a deep connection to the terroir. Their partnership with the Santuario Project infuses the operation with a scientific, data-driven approach to quality and experimentation.
Founded by passionate agronomists and researchers, the Santuario Project acts as an innovation hub, working with select micromills to push the boundaries of coffee processing. At Fátima, this translates to meticulously controlled fermentation experiments (such as anaerobic processes, thermal shocks, carbonic macerations and yeast inoculations) using small, traceable lots that are separated using a variety of markers.
Through these experiments, the project seeks to isolate and amplify unique sensory attributes inherent in each coffee they process, transforming the micromill into a laboratory for crafting distinctive cup profiles and the creation of microlots that reflect both lineage and exploration: traceable, high-altitude coffee grown with long-term family investment, processed with innovation to express clarity, intrigue and terroir.
