Such conditions stress the coffee trees, enhancing the quality of the beans and resulting in a unique cup profile.

The Pacas variety, which Don Héctor cultivates, is a natural mutation of Bourbon, first discovered in 1949 on the Pacas family farm in the Santa Ana region of El Salvador. Despite its susceptibility to coffee rust, Pacas remains widely cultivated in El Salvador, accounting for 25% of the country's total coffee production due to its strong yield potential and high cup quality.
